Now that it’s October and vacation seems far away, I console myself by remembering Italy. The photo above is of a place we stayed outside Parma, the Antica Corte Pallavicina. It’s an old tax station on the Po River refurbished by well known chef Massimo Spigaroli and turned into an inn cum restaurant where they serve the culatello ham (from black pigs) and, of course, parmagiano. They took Sheryl, Madeleine and me to a parmagiano factory to see how the great cheese was made, photo below:
