There were only two varieties of chocolate before Nestle created white chocolate bars 80 years ago, but a Swiss chocolate producer has finally crafted the fourth type of chocolate. Barry Callebaut AG is currently testing how people feel about the innovative pink treat in the United States, UK, China, and Japan, and I wouldn’t be surprised if we start seeing ruby chocolate treats offered at your local candy store alongside traditional dark, milk, and white chocolates before too long.

“Ruby Chocolate” has been in development for over ten years, and does not contain any artificial colors or flavors — this chocolate is naturally pink. The chocolate beans used to make ruby chocolate originate from Brazil, Ecuador, and the Ivory Coast, and the final product gets its crimson hue from a powder that is removed from the beans as they are processed.
Ruby chocolate was unveiled to the public at an event in Shanghai, China, where the company noted that “The fourth type in chocolate offers a totally new taste experience, which is not bitter, milky or sweet, but a tension between berry-fruitiness and luscious smoothness.”
Barry Callebaut is the world’s largest cocoa processor with 10,000 employees, and they sell chocolate directly to the most popular chocolate brands around, including Hershey’s and Cadbury. Does that mean that ruby chocolate bars are in the works? I absolutely hope so!
