Oh yeah, another game that should be adapted: the original Doom trilogy.

This time, play the adaptation completely straight by making it a story about the Martian moon bases being invaded through experimental hyperspace gates by demon-possessed extraterrestrials from Hell; none of that "genetic tampering turns people into monsters" crap from the lousy in-name-only movie adaptation Hollywood actually made.

Astyanax!

Ladies and gentlemen, I give you my favorite example of why old-school games with linear minimalist plots make for far better movie adaptations than the complicated non-linear RPGs with loads and loads of characters that we gamers love so much nowadays. Here's a play-through of the game on YouTube:

I'd also probably enjoy a movie adaptation for the Ninja Gaiden games and maybe Vice: Project Doom.

Final Fantasy 1,2(4),3(6) or 7 would do.

Oh yeah, Dragon Warrior and Crono Trigger can be added to the list as well.

Hell any good JPRG from the SNES/PS1 era would be fine by me.

Actually, I think those are the very games that should NOT be adapted into movies precisely BECAUSE they're such excellent games. See my comment on another thread concerning book adaptations:

Those same qualities, however, do make some of them good candidates for novelizations: see, for instance, a couple of the listings on this page that point to fan novelizations for Chrono Trigger:
