The photo above is of a place we stayed outside Parma, the Antica Corte Pallavicina.  It&amp;#8217;s an old tax station on the Po River refurbished by well known chef Massimo Spigaroli and turned into an inn cum restaurant where they serve the culatello ham (from black pigs) and, of course, parmagiano.
