A third on the uni. I have had it in sushi restaurants, and it’s awful. I have also had urchin that was perfectly fresh (cut it open myself, in fact), and it was one of the most seductively rich and wonderful foods I’ve ever had. I didn’t have any rice and seaweed with me at the time, which I regretted deeply.
I didn’t dive for the urchins, but they had been shipped live. I think that’s what makes the difference.
