I’m with Roger L. Simon on the urchin. I’m living in Italy and the fresh ricci (urchin) eaten fresh from the water, indeed with a little seawater in it, is sublime. The urchin is served in its shell in the ristorantes. It is acceptable to lick the the inside or scrape with a bit of bread. With a good prosecco…ummmm yeah! No sushi places here in Brindisi though. The ricci (when available) will have to tide me over until I get into Rome again.
